The Rathskeller
BEER HALL MEETS MODERN
The Rathskeller is the German term for ‘council’s cellar,’ a room in the basement of a civil building. Formerly the mansion's basement housed the jail cell for Morristown. Now, the Rathskeller serves as an event space for weddings, corporate events, and celebrations of all kinds, as well as our own curated concerts and comedy shows. The basement is accessible through the parking garage underneath the mansion, using the stairs next to the Vail Bar, or by taking the elevator from the main or second floor.

Agustí Torelló Mata, Brut Reserva Cava | 2019 {In Our Opinion One Of The BEST Cava Producers In Spain}
This organically farmed Estate fruit Cava is way more serious than you may be used to. The wine spends three years on the lees and is only disgorged when the US importer places their order. This results in a richer, more complex style of Cava that displays some serious brioche.

Auntsfield, Single Vineyard Sauvignon Blanc | 2023 {Family Run Winery Stretching Back To 1873}
Powerful, tight and elegant. This wine displays intense ripe fruit flavours of passionfruit juice and white peach, with citrus notes of lime and mandarin pith. The palate has intense concentration and generous weight, balanced by an underlying minerality and tight structure to shape a wine with lively tension and textural balance.

Domaine Reine Juliette | Picpoul de Pinet | 2022 {Picpoul means "stings the lip"}
this white made of 100% Picpoul blanc planted to red clay soils along edge of the Bassin de Thau. The fruit is 100% destemmed and sorted, and then it is made from a blend of free run and pneumatic press juice. Fermentation in stainless steel settled with cold. Short aging in bottle prior to release.

Finca La Igriega, Single Vineyard Malbec | 2020 {OMG Does This Wine Punch Above Its Weight Class!}
A beautiful Ruby hue with aromas of dark fruits, damp earth, and a touch of vegetal. Dry and medium bodied with medium- tannins and acidity, the palate is soft and easy, with notes of oak, leather, drying red and purple fruits, and a hint of pepper. A medium finish, this single vineyard Malbec is a stunner.

Shelter Winery, Baden Spätburgunder | 2021
Hans-Bert Espe and Silke Wolf are two Northerners who met while studying winemaking at Geisenheim and decided to found their own estate in 2003. They made their first wines in a bunker on an abandoned Canadian airfield (hence the name) and have since built themselves a winery based on the same design. They have vineyards with old vines in the villages of Kenzingen and Malterdingen, and produce some of the best wines of the region.

Bertrand Stehelin, Sablet Cote du Rhone | 2014 {Classic GSM From The Southern Rhone}
In addition to working with his family’s estate, Paillère and Pied-Gû, Bertrand Stehelin has also been producing and bottling wine under his own label since 2004. Stehelin farms about 3 hectares in Gigondas and 1.3 hectares in Sablet. His vines in Gigondas are planted between 100 and 300 meters above sea level and are all in the range of 70-90 years old. His vines in nearby Sablet are a bit younger, but the Grenache, which comprises most of the blend, comes from 40 to 60 year old vines planted on gently sloped, sandy soils. The Gigondas ages for two years in foudre, and the Cotes du Rhone Villages ‘Sablet’ spends 11 months in concrete.

Quinta das Maias is a prime example of the passion with which newly-crafted wines from the Dão region are formed. Located 600 meters above sea level on a high plateau in the area, it's a gorgeous-looking wine farm owned by Luis Lourenço, a former mathematics teacher, who has taken a methodical approach to winemaking and controls all its processes.

Acquesi, Valle delle Rose Brachetto D' Acqui | 2022
Very small grape production in Piemonte. Brachetto is a dessert wine and the perfect alternative to Moscato. It has a wonderful aroma of strawberry and raspberry with notes of flowers such as violets and orchids. It is frizzante, lightly sparkling.

Domaine du Mas Blanc, Banyuls Hors d'Age le Colloque | NV
From the benchmark producer of the appellation and most historic estate in Roussillon, ‘Le Colloque’ is made from old-vine Grenache noir aged in demi-muid. The wine is a blend of three vintages with reserve wine from the previous blend of vintages in a roughly 2/3 to 1/3 proportion. Balanced, poised and energetic, the specified vintages lend vibrancy and exuberance; the reserve wine depth and complexity.
