Hans-Bert Espe and Silke Wolf are two Northerners who met while studying winemaking at Geisenheim and decided to found their own estate in 2003. They made their first wines in a bunker on an abandoned Canadian airfield (hence the name) and have since built themselves a winery based on the same design. Josephin & Jarkko Peränen lead the team behind the Candialle winery. Their 42 hectares consist of olive trees, surrounding woodlands, and 12 hectares planted to vines. They plant cover crops like barley and wheat to protect the soils. Grapes for this wine are grown on two sites high in the cool Adelaide Hills. One is planted with Dijon 114 and 115, and the other Dijon 777 clones, both the sites and the clones are kept separate for the initial fermentation. 100% whole bunches are cold soaked and the different vineyards and clones are fermented separately with wild yeasts in a mix of old and new French oak barriques. During the first three months, the barrels are rolled occasionally and gently hand plunged. After ten months the wine is carefully gravity racked to tanks before being bottled unfined and unfiltered.
